Papad Carrot Chaat

Ingredients:

Peppercorn Papad 2
Grated Carrot -½ cup
Grated Mango - ½ cup
Chopped Tomato -½ cup
Chopped Onion -½ cup
Roasted Peanuts -2 tbsp
Lemon Juice - ½ Tbsp
Cilantro few sprigs
Red Chilli Powder few Pinches
Chaat Masala - ¼ tsp
Salt to taste

Method:

In a mixing bowl, mix together grated carrot,Mango, onion, tomato, roasted peanuts, cilantro and lemon juice.Place the papad in microwave for half a minute. Layer the roasted papad with carrot mixture. Sprinkle salt, chaat masala and red chilli powder.Serve papad carrot chaat immediately.

Coconut barfi / laddus


Ingredients:

1 lb (500 grams) Coconut powder
I can of condensed milk

Method:

Separate about 2 table spoons of coconut powder aside for garnish. Mix the two ingredients. When thoroughly mixed form into laddus. To make exactly the same size laddus, you can use a ice cream scoop, a kitchen weighing scale or eyeball it like I do. I pick up a fistful of the mixture and wrap my fingers around it. It should fit in my fist and not bulge out on the sides. Repeat for the rest. When finished roll the laddus in the coconut powder to coat and serve. Makes about 20 laddus.

If making barfi, spread on a plate or cookie sheet to make barfi. Sprinkle the coconut on top and press slightly. Cut into diamonds and serve.

Basoondi

Basoondi is a rich Indian sweet. Since it is highly rich in calories, it is normally a festive treat and basically thickened milk flavored with saffron or fruits or nuts.

Ingredients:

Whole / Skimmed Milk 4 cups
Pistachios -5
Almonds - 3
Charoli - 1 tsp
Saffron few strands
Sugar 1/2 cup

Method:

Soak pistachios and almonds in warm water for few minutes.Peel the soaked nuts and thinly slice them. Wash charoli / sunflower seeds and keep aside. Soak saffron in a tbsp of milk for a minute.

Boil milk in a low flame until it reduces to half and coats the back of the spoon. Keep stirring during the process to avoid scorching. Stir in sugar and saffron milk. remove once the sugar melts completely. Garnish chilled basoondi with dry nuts.

Melty Marbles



Ingredients

Condensed milk -200 ml
Coconut powder - 200 gms
Cooking chocolate - 200 gms

Method:

Combine condensed milk and coconut powder then keep it in refrigerator for about 10 to 15 minutes, to make it stiff to roll out the mixture into small balls.Place the balls over the parchment paper in a plate and keep it in the refrigerator for another 15 minutes. Meanwhile using double boiler process melt the cooking chocolate and dip in the balls in melted chocolate. Sprinkle little coconut powder on top of it. Keep the chocolate coated balls in the refrigerator for another 5 minutes and serve. hmmm yummy naa?

Chickoo Walnut Kheer

Ingredients

Chickoos, peeled and pureed 3
Dark chocolate, grated ½ cup + 2 tablespoons for garnishing
Brown rice, soaked - ½ cup
Skimmed milk - 4 cups
Sugar - ⅓ cup

Method

Take rice and milk in a deep pan and cook on medium heat, stirring continuously, ensuring that the rice does not stick to the bottom. Cook till the rice is soft and the milk reduces.Add sugar and stir till it dissolves.Add crushed walnuts and stir. Transfer into a bowl and when it is cool add chickoo pulp and mix.Pour into individual bowls. Place a walnut kernel in the centre and serve.

Mutter Pulav

A simple and tasty pulao is here for you...


Ingredients
Basumathi Rice - 1 cup
Peas - 1/2 cup
Chopped Onion - 1
Ginger garlic paste  - 1 tbsp
Green chillies  - 2
Mint & Coriander leaves - handful
Garam masala - 1 tsp
Cloves - 2
Cinnamon - small piece
Cardamom - 1
Ghee  - 3 tbsp
Salt

Method:-

Soak the rice for 30 mins. Heat the ghee in a cooker and add cloves,cinnamon ,cardamom & saute for 30 sec.Then add onions & slitted chillies, when onion turns translucent add ginger garlic paste and saute well. add peas and saute for a while and add rice and mix well. Then pour enough water,coriander & mint leaves, salt & garam masala.Mix it well and close the lid.Cook it for 3 whistle. Pulav is ready to gobble it up.

Brown Sugar - 2 tbsp
Cinnamon Powder - 1 tbsp

No Bake Oatmeal Cookies

Ingredients:-

milk 1/2 cup
sugar 1 1/2 cups
unsweetened cocoa powder 3 Tbsp.
peanut butter 3 Tbsp.
butter 1/2 cup
rolled oats 3 cups
coconut 1 cup
vanilla 1 tsp.
salt 1/4 tsp.

Method:-
Combine milk, sugar, cocoa, butter, and peanut butter. Stir and bring to a boil over medium heat. Let boil, without stirring, for 2 minutes.Remove from heat. Stir in oats, coconut, vanilla and salt. Stir until oats are evenly distributed.Drop a spoonful onto parchment paper and Cool.

Homemade Tortillas


A tortilla is popular in Mexico and used for making tacos, burritos, enchiladas etc it is a thin flat bread made out of all purpose flour and very similar to our Indian flat bread which is made with wheat. we can make this at home and you will never want to use store bought tortillas once you start making it at home.

Ingredients:-

All purpose flour/Maida - 2 cups
Salt - 1/2 tsp
Water - 1 cup
Olive oil - 3 tbsp
Baking powder - 1/2 tsp

Method:-

Combine flour, baking powder, oil and salt in a mixing bowl. Slowly start adding water and knead to make a smooth dough. Let the dough rest for 15 minutes to ferment. Divide dough into small portions.then roll each portion into a circle using a rolling pin. Heat a non-stick skillet and cook tortillas over medium heat on each side or until lightly browned. cool and store them in refrigerator and heat them when required.

Note:-
we can store them in refrigerator for 3-4 days 

Cilantro Butter Corn

A simple Snack to munch in the lazy evenings with a cup of Cardamom Tea. You too try it out and let me the outcome.

Ingredients:

Sweet Corn - 1
Butter - 1 pack
Cilantro - 1 Handful

Method :-
Cook sweet corn in cooker with enough water. Meanwhile Melt the butter and chop up the cilantro into fine pieces Add it to the melted butter and let it all seep together for a while.then i took the cooked corn and i basted it with a cilantro butter with the basting brush and it tasted yum.
